But then a Boston restaurant apparently invented a time machine, came to the future, invented a mind reading machine, and stole my idea, so I tried their Oven-Roast Watermelon Steak recipe, and even though I added twice as much cream sherry as was called for, it was still pretty tasty.

Ingredients:
- 1 small watermelon
- 2 tsp tahini
- 4 tbsp soy sauce
- 2 tbsp balsamic vinegar
- 3 tbsp sesame oil
- 1 tbsp tomato paste
- ¼ tsp red pepper flakes
- 2 garlic cloves, minced
- 2 scallions, sliced
- ¼ cup chopped fresh cilantro
- sea salt to taste
Instruction:
- To make the marinade, add the tahini, soy sauce, balsamic vinegar, sesame oil and tomato paste to a bowl and whisk to combine.
- Add the garlic, red pepper flakes, scallions and cilantro and stir to combine.
- Set aside.
- Cut the watermelon into 1/2 to 1-inch wide rounds.
- Take 3 rounds and remove the rind and seeds from each.
- Cut the watermelon slices into rectangles.
- Place the watermelon “steaks” in a shallow dish.
- Pour the marinade over the “steaks”.
- Cover and leave to marinade for at least 2-3 hours.
- Preheat grill to medium heat.
- Grill the watermelon steaks 5 minutes per side.
- Serve immediately.
