Ingredients:

  • 3 ears Chili Lime Corn On The Cob
  • 1 pound raw jumbo shrimp, peeled and deveined
  • 3 tablespoons olive oil, divided
  • 1 teaspoon paprika
  • 1 teaspoon minced garlic
  • 1/2 lime, juice and zest
  • 3 tablespoons plain Greek yogurt
  • 1/2 tablespoon honey
  • pinch of crushed red pepper
  • salt and pepper to taste

Instruction:

  1. Heat grill to medium-high heat.
  2. In a medium bowl mix 1 tablespoon of olive oil, paprika, garlic and salt and pepper to taste. Add shrimp and toss to coat.
  3. Place shrimp in a grill basket or on skewers. Shuck and prepare chili lime corn on the cob for the grill.
  4. Whisk 1 tablespoon of olive oil, lime juice, honey, and yogurt together in a small bowl. Add crushed red pepper, lime zest and salt, and pepper to taste, whisk again and set aside.
  5. Grill the corn until tender and slightly charred, about 10-12 minutes, turning occasionally during cooking. Remove corn from grill and set aside to cool a little. Grill the shrimp for about 4 minutes (2 minutes per sides) or until shrimp turn pink. Remove from grill.
  6. Cut the corn off the cob. Serve roasted corn with grilled shrimp and drizzle with lime vinaigrette.
