Sliced tomato, red onion, butter lettuce, aioli, or a squeeze of fresh lemon juice are just a few other toppings that come to mind. For toppings, we love the flavor combination of tartar sauce, sliced pickles, and arugula, but you can use your favorite toppings or what you have on hand.

Grill rolls, cut-sides down, until just toasted, about 1 minute. Spread cut sides with herbed mayonnaise. Divide salmon among rolls; top with lettuce, tomato, and cucumber. Season with flaky salt, pepper, and a squeeze of lemon; serve.
