Grilled Acorn Squash Recipe

Try this recipe the next time you have a fancy meal, and you’ll be sure to please most everyone. When grilling an autumnal feast, don’t think that the acorn squash needs to go in the oven. Instead, you can make sweet acorn squash on the grill. This squash dish makes a great side for turkey, prime rib, lamb, or duck.

You can set up a charcoal grill so the coals are to one side and then grill the squash on the unheated side. For a gas grill, turn off the flame on one side. Depending on your grill, you might be able to turn off the back or front rows of flame, or it may have controls for each side. This recipe uses the indirect grilling method to bake the squash on the grill.

The squash can also be indirectly grilled by wrapping them in aluminum foil, using a cast-iron drip pan, or by placing a disposable aluminum drip pan underneath the squash, which will catch any juices from the sweet filling that may drip.

Ingredients:

  • 2 medium acorn squash (seeds removed and cut into wedges)
  • 4 Tablespoons salted butter (melted)
  • 4 Tablespoons brown sugar
  • 2 teaspoons apple cider vinegar
  • 2 garlic cloves (grated)
  • 1 teaspoon soy sauce
  • 1 teaspoon black pepper

Instruction:

  1. Preheat. Preheat your grill for two-zone cooking (around 350 degrees F overall temperature).
  2. Season the squash. In a medium bowl, combine the melted butter, brown sugar, apple cider vinegar, grated garlic, soy sauce, and black pepper. Brush all sides of the acorn sides with the brown sugar butter mixture.
  3. Grill. Place each squash wedge on the direct heat side of the preheated grill and cook for 1-2 minutes per side. The sugars will caramelize and brown quickly. Move the squash over to the indirect heat side of the grill, close the lid, and cook for 30 minutes, turning every 5-7 minutes to help them cook evenly. Squash should be crispy on the outside and fork-tender on the inside. An internal thermometer should read around 210 degrees F when inserted into the flesh of the squash.
  4. Serve immediately. Remove the squash to a serving platter and sprinkle with some additional salt, to taste, if desired.
