Easy Grilled Cheese Recipe

The best grilled cheese ever has a crispy-crunchy exterior, a melty cheddar interior, and the cheese pull that will blow your mind. Choose a hearty loaf of bread, butter it, and shred your favorite cheddar.

A grilled cheese is only as good as the cheese used in it, so be sure to use melty varieties like American, cheddar, pepper jack, havarti, gruyere, and Monterey Jack. Shredded cheese will melt more quickly than a slice and create a better cheese pull for the best results, so be sure to shred the cheese yourself rather than purchasing pre-shredded varieties, which have additives to keep them from melting as quickly.

Mayonnaise and butter both work great for getting an extra crispy exterior, but mayonnaise adds an extra layer of creaminess and saltiness. A tip we love is to use salted butter for your grilled cheese if you don’t want to use mayonnaise. Our classic grilled cheese keeps the tradition of using softened butter to coat the outside of the sandwich.

The best thing about a grilled cheese is that you can add anything to it, including bacon or ham, apples and jam with brie for a sweeter grilled cheese, or an antipasto grilled cheese for a more distinctive flavor.

We prefer a slice of bread that isn’t too thick so that the whole thing feels crispy. Really any bread works well in a grilled cheese. We love a slice of sourdough, white bread, and even brioche.

Generously butter one side of a slice of bread. Place bread butter-side down in the hot skillet; add 1 slice of cheese. Butter a second slice of bread on one side and place butter-side up on top of cheese. Cook until lightly browned on one side; flip over and continue cooking until cheese is melted.

American cheese, Cheddar cheese, Brie, Monterey Jack cheese, Pepper Jack cheese, Gouda, Havarti, and Fontina are some of the cheeses I choose to use because the differences between yellow and white Cheddar are not very great.

The exterior of grilled cheese made with mayo rather than butter has a rich, golden color, and some people even remark that it tastes better.
