Shredded cheese will melt more quickly than a slice and create a better cheese pull for the best results, so be sure to shred the cheese yourself rather than purchasing pre-shredded varieties, which have additives to keep them from melting as quickly.

Mayonnaise and butter both work great for getting an extra crispy exterior, but mayonnaise adds an extra layer of creaminess and saltiness. A tip we love is to use salted butter for your grilled cheese if you don’t want to use mayonnaise. Simple is best when it comes to classics like a grilled cheese sandwich! All you need is bread, butter, and lots of cheese for this version.

Ingredients:

  • 5 tbsp. butter, softened, divided
  • 4 slices sourdough bread
  • 2 c. shredded cheddar

Instruction:

  1. Spread 1 tablespoon butter on one side of each slice of bread. With butter side down, top each slice of bread with about ½ cup cheddar. 
  2. In a skillet over medium heat, melt 1 tablespoon butter. Add two slices of bread, butter side down. Cook until bread is golden and cheese is starting to melt, about 2 minutes. Flip one piece of bread on top of the other and continue to cook until cheese is melty, about 30 seconds more. 
  3. Repeat for the second sandwich, wiping skillet clean if necessary.
