Prep: 20min

Total: 230min

Ingredients:

  • 1 cup KC Masterpiece® Original Barbecue Sauce
  • 2 slabs baby back ribs
  • Kingsford® Charcoal with Applewood
  • 1 tbsp. dry rub mix (below)
  • 0.25 cup apple jelly
  • 0.25 cup brown sugar
  • 0.25 cup honey
  • 0.5 cup apple cider
  • 1 tsp. black pepper
  • 2 tsp. salt
  • 4 tsp. chili powder
  • 4 tsp. garlic salt
  • 0.25 cup dark brown sugar
  • 0.25 tsp. cinnamon
  • 0.25 tsp. red pepper
  • 0.25 tsp. white pepper
  • 0.5 tsp. celery salt

Instruction:

  1. Remove the membrane from the back of the rib slabs. In a small bowl, combine the dry rub ingredients and mix well. Reserve one tablespoon of the rub for the liquid seasoning mixture. Generously apply the dry rub onto the front and back sides of the ribs.
  2. Build a charcoal fire using an indirect cooking technique such as the snake method. Add a small aluminum pan to the void side of the grill and fill halfway with water. When the charcoal grill reaches 250°F, place ribs meat-side up on the grill grate and cook over indirect heat for 2 hours and 15 minutes.
  3. Remove the ribs from the grill. Place each slab meat-side down on its own doubled aluminum foil square. Mix the liquid seasoning in a small bowl. Pour ½ cup of the liquid over each slab. Then, tightly wrap and seal each slab with aluminum foil. Place the wrapped ribs back in cooker for 1 hour at 250°F.
  4. Remove the ribs from the charcoal grill and discard foil. Place the ribs back on the grill. Brush KC Masterpiece® Original Barbecue Sauce on both sides of the ribs, grill for 15 minutes, or until sauce caramelizes.

FAQ

How long do you cook ribs on a charcoal grill?

Place the ribs meat-side up on the grill grates and cook them for 2 hours and 15 minutes over indirect heat once the charcoal grill reaches 250°F.

What is the 3 2 1 rule for ribs?

In essence, making 3 2 1 ribs involves smoking the ribs for 3 hours on the pellet grill, wrapping them in foil for 2 hours while they continue to cook on the grill, and then cooking them for 1 hour while unwrapped and doused in barbecue sauce.

Do you flip ribs on charcoal grill?

The tight packet helps to trap the flavors, keeping the meat tender and juicy while cutting the grilling time in half. While using foil to cook ribs may seem like an unlikely concept, it actually speeds up the cooking process without sacrificing flavor and tenderness.
