Brioche Grilled Cheese Recipe

We’ve finally settled into our new home in Medina and have begun exploring the area. Every Saturday, there is a farmer’s market on the Historic Square, and because Medina is situated somewhat in the country, you can be sure that whatever the local farmers are selling is extremely fresh.

I bought some brioche, garlic scapes, and amazing grassfed and raw milk cheeses this week.

I’ve never had raw milk cheese before, but I now crave it whenever I eat cheese – plus it’s healthier for you too! So bring on the cheese, please. Nick and I decided to get a few different kinds of cheese, and since we prefer spicy foods, spicy cheeses were of course a must. We chose some raw milk pepperjack, grassfed habanero cheese, as well as some grassfed mozzarella cheese too.

With that in mind, I reasoned that Brioche was also the ideal bread for grilled cheese, where I really wanted the bread to still be thick and crunchy on the outside, and filled with cheesy goodness on the inside. Brioche is celebrated as the perfect bread for French toast, and it’s simple to see why. it readily absorbs liquids while still retaining its shape and thickness.

Then, just toss the butter in the skillet and fry until golden brown and the cheeses have melted together into an ooey gooey mess – the perfect grilled cheese! I added all three types of cheese, plus a tablespoon of pizza sauce (because i didn’t have any tomato soup to dip my grilled cheese in) and some fresh basil along with the scapes.

Ingredients:

  • 4 slices brioche or sourdough type bread
  • 1 C cheddar cheese, shredded
  • 1/2 C manchego cheese, shredded
  • 2 tbsp mayonnaise
  • 2 tbsp unsalted butter

Instruction:

  1. Spread 1/2 tbsp of mayonnaise onto each slice of bread, on one side.
  2. Put both cheeses onto two of the bread slices and then put the other bread slices on top of that to form the sandwiches.
  3. Put a pan on the stove over medium heat with half of the butter and cook both sandwiches for 2 minutes.
  4. Turn the sandwiches around, add the rest of the butter and cook for 2 minutes until they are golden brown. Take the sandwiches off the heat and they are ready!
