Paleo Grilled Chicken Breast Recipes

Gluten-free and dairy-free, this Paleo Grilled Honey Mustard Chicken is flavorful and just a touch sweet.

Since baking is my true passion and the reason I share so much here, I find it difficult to post savory recipes. However, I forced myself to make this chicken because it was so good. It was tangy with just a hint of sweetness.

I prefer to keep my sweeteners in my desserts, and this amount of the marinade added enough sweetness to balance the mustard. This marinade only calls for a few straightforward, paleo ingredients, and it only needs 2 tablespoons for up to 2 pounds of chicken.

I used dijon for this, but yellow or spicy will also work; really whatever you love, just check the ingredients to make sure there isn’t added sugar or gums. My two favorite mustard brands are Annie’s and Primal Kitchen.

Ingredients:

  • 1/3 cup mustard (Dijon)
  • 2 tablespoons avocado oil
  • 2 tablespoons honey
  • 1/2 teaspoon salt
  • 2 tablespoons water
  • 1.5-2 pounds chicken

Instruction:

  1. Combine the mustard, avocado oil, honey, salt and water in a small bowl and stir well until smooth. Add the chicken to a medium glass container and pour marinade over it, making sure all sides are coated. Let marinate for at least 1 hour or up to overnight.
  2. If only marinating an hour, keep at room temperature. If marinating overnight then cover and place in the fridge. Remove 1 hour before grilling.
  3. Grill over medium/high heat for 8 minutes, flipping half way or until 165° internally. Discard any extra marinade.
