These mouthwatering molletes grilled cheese sandwiches, which are stuffed with refried beans, gooey melted cheese, and homemade pico de gallo between two thick slices of buttery brioche, are modeled after the traditional Mexican molletes recipe.

One of those comfort foods that always makes me feel better about the world is molletes, a traditional Mexican open face sandwich with melted cheese. I mean, isn’t that what comfort food is all about? It’s like biting into a piece of home, into food that is filled with love.

This is, without a doubt, my new favorite grilled cheese sandwich. It’s not just the combination of the warm refried beans (I still use the same brand my mom used when I was growing up), gooey Oaxaca cheese, and fresh pico the gallo, it’s also the fact that the molletes are typically an open faced sandwich, which made me want something that was easier to eat, not as messy.

Ooey Gooey Mexican Grilled Cheese 🔗

Ingredients:

  • 2 slices of thick bread (we used an Italian loaf)
  • ¼ cup of shredded Mexican melting cheese
  • ¼ cup roasted corn
  • ¼ to ⅓ cup grilled shredded chicken
  • 4 to 5 jalepeno slices
  • 1 lime wedge
  • 1 tablespoon tablespoon of cumin butter (combine softened butter, a pinch of garlic salt, 1 teaspoon cumin and 1 teaspoon chile powder)

Instruction:

  1. Smear some of the cumin butter on a slice of bread and place, butter side down, on your warm griddle.
  2. Working quickly, pile on some shredded cheese, corn, chicken, jalepenos, and more cheese.
  3. Top with another slice of buttered bread.
  4. Grill, 3-5 minutes per side, or until lightly golden.
  5. Before serving, squeeze a lime wedge on top.
