Smoked Prime Rib With Au Jus 🔗

Ingredients:

  • 1.7 kilogram (4 pound) prime rib roast
  • 3 ml (1/2 teaspoon) salt
  • 3 ml (1/2 teaspoon) pepper
  • 3 ml (1/2 teaspoon) onion powder
  • 3 ml (1/2 teaspoon) garlic powder
  • 1/2 large onion, cut in chunks
  • 3 carrots, cut in chunks
  • 2 stalks celery, cut in chunks
  • 3 clove garlic, peeled
  • 750 ml (3 cups) beef stock
  • 15 ml (1 tablespoon) ketchup
  • 125 ml (1/2 cup) dry red wine
  • 45 ml (3 tablespoons) butter (optional)
  • 45 ml (3 tablespoons) flour (optional)

Instruction:

  1. Mix salt, pepper, onion powder and garlic powder together.
  2. Rub over the surface of the roast.
  3. Put the vegetables in a roasting pan.
  4. Put a rack on the pan, the roast on the rack and place it a smoker or oven preheated to 350 F.
  5. In one hour, add 375 ml of the beef stock to the roasting pan.
  6. Cook to an internal temperature of 125 F for rare (about 1 1/2 hours) 135 for medium rare (about 2 hours).
  7. Cover the roast with foil.
  8. Put the vegetables and any liquid from the roasting pan in a saucepan. Add the remaining beef stock, wine and ketchup.
  9. Bring to a boil and simmer for 15 minutes.
  10. Strain out the vegetables.
  11. Remove the fat from the top of the liquid by using a poultry baster to pull the liquid from underneath.
  12. If you want a liquid “au jus” style sauce, carve the roast and serve.
  13. If you want a thickened gravy, melt the butter in a saucepan and stir in the flour to mix. Add the liquid slowly, stirring over medium heat for about 5 minutes to thicken and cook out the flour.
