My son ALWAYS requests mac and cheese and cheeseburgers, so I HAD to combine the two and create a recipe for cheeseburger mac and cheese.

The other night, I retrieved some cheeseburger leftovers from the fridge and added them to a simple mac and cheese recipe that only requires one pan. It’s the ideal weeknight dinner!

Ingredients:

  • 1 lb of leftover cooked Hamburgers
  • 1 large Onion, finely diced
  • 2 tsp of chili powder, more or less to taste
  • 1 can of Cream of Mushroom Soup
  • 1 can of condensed Tomato Soup
  • 1 can of whole kernel Sweet Corn, drained
  • 1.5 cups of cooked and drained macaroni noodles
  • 2 cups shredded sharp Cheddar cheese, more to taste
  • Salt and ground black pepper, to taste

Instruction:

  1. Preheating oven to 350°F (177°C)
  2. In a large mixing bowl crumble the cooked hamburgers. Add the diced onion and chili powder and stir until incorporated.
  3. Pour the cream of mushroom soup, tomato soup, and drained corn kernels and mix thoroughly.
  4. Add the cooked macaroni noodles to the bowl and mix until well coated.
  5. Transfer the mixture to a greased 9 x 13 inch baking dish.
  6. Place the baking dish into the preheated oven and bake for 40 minutes.
  7. Remove the casserole from the oven and cover the top with cheese.
  8. Place the baking dish back in the oven and bake for another 15 minutes or until the cheese is melted and bubbly.
  9. Remove the pan from the oven and let sit for 5 minutes before serving.
