Grillos Pickles Recipe

When I was craving dill pickles a few months ago and couldn’t find any, I found a recipe and tweaked and added and subtracted, until I got them SO CLOSE. Grillo’s are a real favorite but they’re not easy to get here. Walmart has them occasionally. If I can get to Costco, I grab a bucket full.

English cucumbers are always available; if you can find pickling cucumbers, which are difficult to come by, you can use those instead. When I tried this with regular American/US cucumbers, they turned out to be really mushy, so I do not recommend it.

Grillo’s Fried Pickle Chips 🔗

Ingredients:

  • 1/4 cup flour
  • 1/4 cup cornstarch
  • vegetable oil (or olive oil spray if air frying)
  • 14 to 16 Grillo's Pickle Chips
  • 1/4 cup ranch dressing
  • 1/2 Tbsp chipotle powder or cajun seasoning

Instruction:

  1. Put the flour and cornstarch in a bowl and mix until combined,
  2. If deep frying:Pour enough vegetable oil in a small saucepan about an inch or two deep. Set the saucepan over medium heat until it reaches 350 degrees. Coat the Grillo's Pickle Chips in the flour and cornstarch mixture. Gently place a few in the oil and cook for about 2 minutes. Remove and place on paper towels. Repeat with remaining pickle chips.If air frying:Coat the Grillo's Pickle Chips in the flour and cornstarch mixture. Spray the pickle chips with the olive oil spray and set the air fryer to 400 degrees for 12 to 14 minutes.
  3. Mix the chipotle powder or cajun seasoning with the ranch dressing.
  4. Serve the pickle chips with the seasoned ranch for dipping.
