  • 1 red onion (- sliced into rings)

  • 1 cup cherry or grape tomatoes
  • 1/2 eggplant (- sliced into bite sized pieces)
  • 1/4 cup olive oil
  • 2 tbsp balsamic vinegar
  • 1 tsp garlic powder
  • 1 tsp dried basil
  • Juice of 1 lemon
  • 1/2 tsp salt
  • 1/2 tsp pepper
