It’s so simple to throw a handful of green onions on the grill next to the main course; they only take a couple of minutes to cook, and they’ll brighten any plate. Grilled green onions, also known as scallions, are incredibly delicious and the ideal spring or summer side dish.

Last summer, I believe I made it almost every single week, so it’s great to have this easy recipe on hand for the warmer months.

Scallions that have been grilling are not only a fantastic side dish, but they can also greatly improve many other dishes.

Because the grill marks add flavor, a really delicious smoky char flavor, I think of grilling as both an ingredient and a cooking method.

Preheat a grill or grill pan to medium-high heat. Using a pastry brush, lightly coat the green onions on all sides with the olive oil. Sprinkle with salt and pepper. Place the onions on the grill and cook until slightly wilted and marked by the grill, 1 to 2 minutes per side.

  2. Place whole onions on a sheet of foil.
  3. Place the butter over the onions.
  4. Sprinkle with garlic salt and pepper.
  5. Fold the foil over the onions and seal the edges so the butter steams the onions.
  6. Place on a hot grill until warmed through, about 10 minutes.

  • 1 dozen green onions (scallions), (washed and dried)
  • about 1 tablespoon olive oil
  • kosher salt and black pepper


  1. Heat grill. Preheat a stovetop or outdoor grill.
  2. Prep onions. Cut off about ½ inch or so from the root end and green parts of the onions. (If they're particularly thick, cut them in half, lengthwise. Toss them with the olive oil on a baking sheet and sprinkle with salt and pepper.
  3. Grill. Once the grill is very hot, add the onions and grill to mark each side, and soften them a bit, about 4 minutes total.
