Grilled Carrot Recipe

Throw these grilled carrots on the grill and serve them with any of your favorite BBQ dishes. They are sweet and savory, perfectly cooked, and full of amazing flavor.

Toss carrots with 1 tablespoon oil, Β½ teaspoon salt and pepper. Grill, directly over the heat, turning often until charred in spots, 7 to 10 minutes. Transfer the carrots to the side of the grill with indirect heat, cover and let cook until they are tender, 17 to 20 minutes longer. Remove to a platter.

Ingredients:

  • 1 lb. small carrots, peeled (halved if medium)
  • 1 tbsp. extra-virgin olive oil
  • Kosher salt
  • Freshly ground black pepper
  • 1/4 c. carrot tops, washed and finely chopped
  • 1 garlic clove, grated or minced
  • 1/4 tsp. dried oregano
  • 1/4 tsp. red pepper flakes
  • 2 tbsp. extra-virgin olive oil
  • 1 tbsp. red wine vinegar
  • 1/2 c. whole milk ricotta
  • 1 tbsp. chopped roasted pistachios

Instruction:

  1. Heat grill or grill pan on low until very hot, about 5 minutes. Toss carrots in olive oil and season with salt and pepper. Place carrots on grill and cook, covered, turning occasionally, until fork-tender and lightly charred, about 25 to 30 minutes.
  2. Combine all chimichurri ingredients in a medium bowl and stir to combine.
  3. Spread ricotta in the center of a serving dish until it is about ¼” thick. Top with grilled carrots, chimichurri, and a sprinkle of pistachios.

What seasoning is good on raw carrots?

The biggest difficulty with grilling carrots is their size; small carrots can easily fall through the grates. However, this problem can be solved by selecting large carrots and then cutting them into pieces that are less likely to do so by slicing them on the bias into 3/4-inch slices.
