Brisket Grilled Cheese Recipe

A fantastic way to enjoy leftover brisket from your weekend cookout, brisket grilled cheese is an epic sandwich to make for lunch or dinner that is filling and delicious.

Smoked brisket makes a great meal prep option for hectic weeknights and the leftovers are perfect for brisket tacos or brisket queso, two of my absolute favorite foods.

One of our go-to meals is a grilled cheese sandwich, which is quick to prepare and can easily feed a crowd when you top it with barbecue brisket. We also enjoy a BLT Grilled Cheese, and homemade cole slaw works well as a side dish for sandwiches.

Ingredients:

  • 1 lb smoked brisket flat (sliced)
  • 8 slices cheddar cheese
  • 8 slices sourdough bread (Texas Toast would be an awesome alternative)
  • 1/2 cup bbq sauce
  • 4 tbsp butter

Instruction:

  1. Top a slice of breead with cheese, brisket and more cheese. Top with the other slice of bread
  2. On a heated griddle, melt butter, then add sandwiches. Cook for about 2-3 minutes on each side, until cheese is melted and toast is golden brown
  3. Serve with barbecue sauce and enjoy!
