My biggest conundrum right now is whether to cook on the stove, the gas grill, the smoker, or the Blackstone Griddle. I’ve been using the Blackstone more and more.

The large cooking area is perfect for my large family, it’s incredibly simple to turn on, and the seasoned griddle just adds more flavor.

Ingredients:

  • Egg, large 1 each
  • Parmesan Cheese 1/2 teaspoon

Instruction:

  1. Preheat Flat Top griddle to the lowest setting. Do not use any wind guards.
  2. Gather all of your ingredients to make this recipe.
  3. Separate the egg whites from the yolks and place into different containers.
  4. With a hand mixer, whip the egg white until a stiff peak forms for about 1 1/2 minute. Do not over mix!!
  5. On a preheated griddle, place a sheet of parchment paper to the flat top.
  6. Add all the fluffy egg white onto the parchment paper in a mound.
  7. Then, make a slight hole in the center of the whites to make a nest shape.
  8. Sprinkle the parmesan cheese and seasoning of your choice to the top of the egg white.
  9. Cover with a dome lid and cook for 2 minutes.
  10. Uncover and place the egg yolk into the center of the fluffy egg white.
  11. Replace the dome lid cover and cook for 2 more minutes or until the whites are starting to turn golden brown and the yolk is set.
  12. With a spatula, remove the cloud egg to a serving platter.
  13. Serve right away.
