This dish of grilled haddock with a lemon and herb sauce is simple and light, and the fish literally melts in your mouth.

Fish is the first thing that comes to mind when I want something quick and nutritious, whether it’s smoked cod, pesto-crusted salmon, or blackened halibut.

However, grilling fish is one of the best methods of preparation. I’m not talking about high heat, though that method is also very tasty.

I’m talking about cooking the haddock in its own sauce while wrapping it in aluminum foil to preserve its shape, retain moisture, and ensure an even distribution of heat.

This grilled haddock is definitely one of my go-to recipes; trust me, after one bite, you won’t cook fish any other way again.[feast_advanced_jump_to]

Haddock should be wrapped in aluminum foil, the lemon mixture should be spooned over the fish, and the foil should be completely covered. Combine the sauce ingredients in a bowl.

It is a white fish with a taste that is similar to halibut and is slightly sweeter and more tender than cod.

Since most fillets are about an inch thick, grilling fish requires 8 to 10 minutes per inch of thickness. If you have a meat thermometer, cook the fish until it reaches an internal temperature of 145°F.

From a vegetable standpoint, I like roasted broccoli, potatoes, or asparagus. And who can forget some good garlic bread. A straightforward rice pilaf works great here.

Haddock that has been grilled should be warmed through for about 15 minutes in an oven set to 275°F.

  • For the Sauce:
  • 3 Tbsp Fresh lemon juice, approx. one large lemon
  • 2 Tbsp Butter
  • 2 Tbsp Extra virgin olive oil
  • 1 Tbsp Shallot, minced
  • 4 Tbsp Capers, drained
  • ½ tsp Kosher Salt
  • ½ tsp Fresh Ground Pepper
  • For the Fish
  • 1-2 large Lemons, sliced into rounds
  • 4 Haddock filets, also delicious with Halibut or any other mild white fish
  • 1 tsp Kosher Salt
  • 2 tsp Garlic Seasoning, garlic, salt, pepper


  1. Preheat your grill or grill pan to medium heat.  Pat the fish dry and spray with non-stick cooking spray or olive oil.  Season with the salt and garlic seasoning. 
  2. If you are using your grill, coat it with a little bit of olive oil. Next, place about 2-3 slices of lemon (for each filet) onto the grill grates. Now, place a fish filet onto the lemons, close the grill, and cook for about 8 minutes or until the fish is opaque and flaky.
  3. If you are using a grill pan, you can do the same thing with the lemon slices, or you can spray the pay with olive oil, then sear on medium/high heat, each side of the filets for about 4 minutes then flip and do the same until the fish is opaque and flaky.
  4. In the meantime in a small saucepan, combine all of the ingredients for the sauce.  Simmer on low for about 5 minutes.  Just long enough to soften the shallots a bit.
  5. Remove fish from grill or grill pan and top with sauce. 
  6. Serve with Hericots Vert and Rice or Couscous!
