Spice-Rubbed Grilled Pork Chops

Dry rubs are also a terrific way to season pork chops. Select chops of close to an inch in thickness — nothing flimsy — then grill them over steady medium heat. We opt for rib chops over the center-cut variety when cooking outdoors because their greater fat content helps keep them moist, and we always prefer bone-in chops for their juiciness. You might add a barbecue sauce on the side with these, but we relish their crispy surface unvarnished. Serve with your favorite grilled vegetables.

Ingredients

Makes 6 to 8 servings

Pork Chop Willy's Grilling Rub

3 tablespoons sweet paprika, preferably Spanish
1 tablespoon freshly ground black pepper
1 tablespoon coarse salt, either kosher or sea salt
3/4 teaspoon sugar
3/4 teaspoon chili powder
3/4 teaspoon granulated garlic or garlic powder
3/4 teaspoon onion powder
1/4 to 1/2 teaspoon ground cayenne
Six to eight 10- to 11-ounce bone-in pork rib chops, 3/4 to 1 inch thick
Vegetable oil spray

Preparation

  1. Step 1

    At least 1 and up to 8 hours before you plan to grill the pork chops, prepare the dry rub, combining the ingredients in a small bowl. Coat the chops with the spice mixture, place them in a large plastic bag, seal, and refrigerate.

    Step 2

    Fire up the grill, bringing the heat to medium (4 to 5 seconds with the hand test).

    Step 3

    Remove the chops from the refrigerator and let them sit covered at room temperature for about 20 minutes.

    Step 4

    Spray the chops with oil and transfer them to the grill. Grill for 18 to 20 minutes total. Turn onto each side twice, rotating the chops a half turn each time to get criss-cross grill marks. The chops are done when just a hint of pink remains at the center. Serve hot.

  • Like others, I have been searching for a great pork rub and this is fantastic! Easy and tastes great. Since I'm diabetic, I left out the sugar and didn't miss it at all. After using this rub several times I made a variation for a chicken dish... exchanging the chili powder for the same amount of Five Spice...very nice, too.

  • A great tasting rub that would also be complementary on other cuts of pork or chicken. For the paprika, I used equal parts sweet, hot and smoked varieties. I wasn't able to grill I used what I had which was boneless pork loin chops. I baked in the oven on a rack over a foil-lined baking sheet at 375 for 25 minutes and then rested for 10 minutes. Juicy and delicious!

  • Very interesting, strong taste and the rub seemed to seal in the moisture. I used thick boneless pork chops because that's all that was available, marinated for 3 hours and the end result was juicy and flavorful. Loved this recipe.

  • I have never made a pork chop that i liked, every time i put one on the grill i just knew it would suck and it did. using this recipe i created a pork chop genius! I am going to lie to people and tell them this is my recipe!

  • I marinated for about 6 hours. They are good but I don't think the rub does much for flavor. We overcooked the chops a little but still good. Not a WOW recipe however. I made the sauce from another recipe from Food Network: Spice Rubbed Grill Pork Chops

  • This was amazing. Used hot smoked paprika because that's what was on hand. Used thick cut boneless pork chops from Costco. I've never had pork chops this good! Double or quadruple the rub to keep on hand!

  • I really liked it, especially how quick it was to make. I was looking for a recipe that wouldn't take much time to make, or be very complicated. I used smoked paprika, and that gave the chops a very distinct flavor. This dish is great for an easy weeknight dinner

  • Everyone including the non pork lovers really liked this recipe despite being made with quite thin chops. I used some chipotle chile powder which added some smokey flavor. Quick easy and delicious
