Garbo’S Grill Umami Burger Recipe

We ate our way down DuVal Street in Key West on our “day of food,” starting with a fantastic lobster roll at DJ’s Clam Shack and continuing with Garbo’s Grill, another Diners, Drive-Ins and Dives discovery that is housed in a food truck behind a bar.

The 68 cart’s constant line is proof that the food is made inside, according to owners Kenna and Eli Pancamo, who are from the Midwest and have lived in Key West for almost as long as each other.

We were fortunate enough to locate a table in the bar’s shadow on a sunny day while we awaited our order:

Korean BBQ tacos and the Landon Calrissian burger, which is listed on the menu but not on the signboard.

Beef short rib tacos with citrus soy dressing, sriracha, and Napa cabbage, scallions, carrots, and daikon were served.

These tacos, which were like tender, spicier bulgogi, were enormous, which was good because I got to try a bite or two. I would have loved to have had a third person with us so that I could try the fish tacos (which I would have encouraged them to order).

Holy cow – what a flavor bomb! The Landon Calrissian burger is their Umami Burger with Korean BBQ added (a half pound angus burger, rubbed with brown sugar and cayenne pepper, topped with a slice of heirloom tomato, applewood smoked bacon, and chipotle Gouda, on a brioche bun).

Umami is the word – gooey and spicy cheese, salty and fruity bacon, and a slightly sweet and spicy burger (that easily could have stood on its own) – how could it not be delicious? Adding the Korean-flavored short rib with citrus soy and sriracha only improved on an already excellent burger.

  • 2 lbs Ground Beef
  • 1 1/2-2 Tablespoons Fish Sauce
  • 2 cloves Garlic, crushed or fine mince
  • 1 teaspoon Sugar
  • 1/2 teaspoon fresh ground Black Pepper

1. In a small bowl, combine fish sauce, garlic, sugar and black pepper. Add the marinade to the ground beef and combine until all the ingredients are mixed together well. Refrigerate the beef for at least 30 minutes. We like to allow the beef to marinade overnight in the fridge for optimum flavor. 2. Gently form meat into patties. Form them to the size of your burger or slider buns. 3. Cook on a skillet or grill. (1/2 patties on a med./high grill take about 3 min. per side for med. rare burger.
