Recipe For Cauliflower Steaks On The Grill

This recipe for grilled cauliflower steaks is a summertime favorite as a main or side dish because they are tender and have a smoky-sweet flavor.

If you don’t believe me, try setting out a platter of raw vegetables with Mediterranean hummus and bowls of ranch dressing for dipping. Chances are, the carrots, celery, and bell peppers will disappear long before the bland white cauli florets. One reason may be that raw cauliflower lacks flavor; even with a sprinkle of salt or all-purpose seasoning, it can feel like something is missing.

Heat a gas or charcoal grill to medium. Brush each side of cauliflower steaks with olive oil and season generously with salt and pepper. Grill cauliflower steaks for 7 minutes on the first side to develop visible grill marks. Gently flip with tongs and grill 5 to 7 minutes more to your desired tenderness.

  • 2 tbsp guajillo powder (or other chile powder)
  • 1 tbsp chipotle powder
  • 1 tsp garlic powder

FAQ

What is the best way to cut cauliflower steaks?

I would avoid boiling because it will turn the cauliflower damp and mushy. Just cut your cauliflower into florets, coat them with oil, and roast at a high temperature for 25 minutes to get tender roasted cauliflower.

Why do you soak cauliflower?

Pro tip: To remove and kill any unintended protein sources from your organic cauliflower, soak the head in salt water for 30 minutes prior to cooking. After soaking, give the head a quick rinse under cool water. If you’re worried about creatures like worms and insects hanging out in your organic cauliflower, do this.

Does cauliflower steak taste good?

While this won’t pass for an actual steak, the cauliflower steaks taste great and are simple to make. They have a meaty, hearty texture like steak, are very satisfying, and you can put sauces, like chimichurri, on them just like you would a steak.
